Fry until a crispy coat is turned brown. -Repeat same process with all the fillets. -To make mayo sauce, combine chili garlic sauce, mustard paste and mayonnaise and mix well to form a paste. Pour mayo sauce in dressing bottle. -For assembling, take burger buns. Apply mayonnaise on bun. Now saute them for a minute on medium heat and then add salt, water and mix it once. Cover and let it cook for 2-3 minutes or until half done. Switch off the flames and keep it aside to cool down. For Filling In a bowl mix cheese, green/red chillies, dried oregano, bread crumbs and mix everything properly and keep aside for further use. For Chicken Burger Patty In a bowl add chicken mince, mayonnaise and mix it properly until well combined. Now add salt, black pepper powder, sauteed veggies, dried oregano, fresh bread crumbs and mix everything properly. Now apply some water on your hands and take a portion of the mixture and spread it a little in your hand then add a generous amount of filling in the centre then close it up and give it a patty shape. Then roll it in the bread crumbs, keep aside and repeat for the rest of the mixture. Heat a pan with oil in it on medium heat now place the parties in the hot oil and shallow fry them until golden brown and crispy from both sides. Remove and keep aside. For Relish In a hot pan add red bell pepper, yellow bell peppers, salt, black pepper powder and saute for half a minute. Now add water, mustard sauce, honey and mix everything properly then continue cooking for 1-2 minutes. Then remove and keep aside for further use. For Grilled Onion In a pan heat butter then add sliced onions and let them charr on high flames for a minute from both sides. Remove and sprinkle some salt, black pepper powder and keep aside for further use. Then in the same pan taste both half of the burger buns until golden and crispy. For Assembling The Chicken Burger Apply mayonnaise to the toasted buns then place sliced tomatoes, cucumber, some lettuce leaves on the bottom part of the bun. Now place the chicken patty then on it add some relish, some grilled onions, more mayonnaise, cheese slices and place the top of the buns and secure it with a wooden skewer. This Italian twisted fried chicken burger recipe is my secret, it’s so, so delicious and I’m sharing it with you! You simply cannot beat the freshness of homemade fried chicken. This is quite simple to make and despite its simplicity in ingredients. It’s spicy, crispy and juicy. I’ll be bold enough to claim that it’s the best recipe you will ever find. With the smokiness of the paprika, the spicy popcorn like crunchy coating and the brined moist meat, you will be amazed at the outcome using a standard fryer. I’ve made this using boneless, skinless chicken thighs but you can certainly make it with chicken breast, ideally skin on. The ciabatta bread is toasted in olive oil, coated with garlic mayonnaise, that alone is incredible! Serve this fried chicken with a salad, a few fries on the side and a nice glass of wine! No coke! BREADING ▪300g or 1 3/4c ap flour (for breading mix) ▪5g or 1tsp salt ▪2-3g or 1tsp black pepper ▪3g or 1.5-2tsp cayenne pepper ▪3g or 1.5tsp paprika ▪5g garlic powder ▪300g or 1 1/4c buttermilk ▪200g or 1 1/4c ap flour (for dredge) Combine dry ingredients (except 200g ap flour) in a bowl. In separate bowls add buttermilk in 1 bowl and 200g ap flour in another bowl. Pour a small amount of buttermilk into the seasoned breading mixture and whisk. It should still be dry and powdery, but clumpy. Dredge chicken first in the unseasoned ap flour, then in the buttermilk, then the breading mixture, pressing breading into the meat to be sure it sticks. Allow to sit for 5-10minutes before frying. FRYING Add 3qt neutral oil (or enough oil to give you 3”/7.5cm of depth in your fry pot) to a large heavy bottomed pot over medium heat until temp reaches 350F/175C. Gently lay thighs into oil away from you, only frying 2-3pc at a time. Fry for 4-5min until golden brown. Once fried, place chicken in a bowl and stream buffalo sauce on to coat (recipe below). BLUE CHEESE DRESSING ▪75g or 1/3c buttermilk ▪60g or 1/4c sour cream ▪15g or 1Tbsp lemon juice ▪½ clove garlic ▪10g or about ¼ of a rinsed shallot ▪5g or 1tsp salt ▪1 egg yolk ▪300g or 1 1/3c neutral oil (light olive, avocado, canola, etc) ▪100g or 3.5oz blue cheese Add all ingredients except cheese and oil to high sided container. Blend with immersion blender. When combined, slowly stream in oil until emulsified. Add about 50g (or ½ of the blue cheese) and blend until it’s mixed into the dressing. Add another 50g (or less if you don’t LOOVE blue cheese) and stir into dressing. BUFFALO SAUCE ▪300g or 1 1/3c franks hot sauce (or brand of your choice) ▪15g or 3-4 cloves minced garlic ▪20g or 1Tbsp worcestershire ▪15g or 1Tbsp white distilled vinegar ▪150g or 10 1/2Tbsp unsalted butter, cubed ▪Very small pinch xanthan gum (optional) Add all ingredients except butter and xanthan to sauce pan over medium high heat. Whisk ingredients together and allow to cook for 4-5min until thickened slightly. Whisk in butter. Whisk in xanthan gum. POTATO BUN RECIPE: Video: 🤍 ▪125g or 1/2c warm water (86F/30C) ▪3g or 1tsp yeast ▪45g or 3 tbsp melted butter ▪75g or 1/3c mashed potato ▪35g or 2 3/4 tbsp sugar ▪300g or 1 3/4c ap flour (11.7% protein) ▪5g or 1tsp salt ▪egg wash (1 egg + 2 teas water, stirred) Into the bowl of a stand mixer fitted with dough hook attachment, measure water, yeast, melted butter, mashed potato, sugar, flour, salt. Mix on low for 3 mins until combined. Increase speed to med-high and mix 5-6 more mins. Cover & allow to ferment at room temperature for 90 minutes. After that 90 mins, flip out dough onto a lightly floured work surface. Divide dough into six 100g pieces. Fold and shape each of the 6 pieces as shown 🤍2:58. Place on a sheet tray lined with a piece of oiled parchment, cover, and proof at room temp for 45-60 min. Brush each dough ball with egg wash & load into preheated 400F/204C oven for 15min or until deep golden brown. Pak je kip vanuit je marinade en gooi het in je aardappel zetmeel. 8. Alle natte plekjes droog maken en goed afschudden. 9. Frituur je grote stuk kip voor +/- 8 min op 160 graden. (let op de kleur) (als je kleine stukjes doet 1 a 2 min) 10. Haal je kip eruit en laat +/- 15 min rusten op een rekje. 11. Gooi je frituur op 180 graden. 12. 2e keer frituren! 13. Gooi je kip in de pan en laat voor 2 min frituren.(totdat ie goudbruin is, kleine stukjes doe je voor 1 a 1 1/2 minuut) 14. Klaar! 15. Golden Crispy Goodness! Cole-slaw. Ingrediënten: - 1/2 Chinese kool - 2 lente-ui - 3 el rijst azijn - 2 el sojasaus Bereiding: 1. Snij je groene kool tantoe dun. 2. Snij je lente ui iets dikker dan je kool. 3. Gooi alles in een bak. 4. Gooi je azijn en soja erbij. 5. Alles mengen. 6. Good to go. Mayo. Ingrediënten: - 4 el Japanse mayo - 2 el Raijmakers Heetmakers Heat Enhancer hatsas Bereiding Mayo. 1. Gooi je Japanse mayo in een bak. 2. Gooi je favo hatsas erbij. 3. Mengen. 4. Klaar! Burger Buns. Ingrediënten: - 400 gr bloem (Zorg voor wat extra bloem als je deeg te nat is) - 30 gr suiker - 7 gr actieve gist - 250 ml lauwe volle melk - 30 gr gesmolten boter - 1 ei (geklutst) - 5 gr zout - 1 ei (voor insmeren) Bereiding: 1. Meng je bloem, suiker en gist helemaal de moeder in een bak. 2. Gooi al je lauwe melk erbij terwijl je mengt. 3. Nu je boter erbij. 4. 1 ei erbij. 5. Gooi je zout erbij. 6. Mengen. 7. Net zolang kneden zodat het een wat soepeler deeg wordt en minder nat. (let op extra bloem misschien nodig) 8. Maak er een mooie bol van en verdeel in 8 stukken. 9. Bol elk stukje deeg nu goed op met de ‘opbol’ techniek. 10. Leg ze allemaal op een bakplaat met bakpapier. 11. Smeer ze heel licht in met een beetje zonnebloemolie. 12. Dek ze af met een vochtige doek en laat voor +/- 1 uur rijzen op een warme plek. 13. Gerezen? 14. Smeer ze in met wat opgeklopt ei. 15. Oven op crematie standje 200. 16. En laat maar 13 a 15 min bakken in de oven. 17. Klaar.

For burger patty and toasting buns Ingredients: • Chicken 500 gm (boneless) • Salt 7 pepper to taste • Red chilli powder 1 tbsp • Garlic 1 tbsp (chopped) • Fresh coriander handful (chopped) • Oil for grilling • Cheese slices 6 nos. • Burger buns 6 nos. Methods: • Mince the chicken with knife or use food processer to save your energy and time. • Add salt & pepper, red chilli powder, garlic and freshly chopped coriander leaves, mix well and divide the entire chicken mince batch in 6 equal parts. • Grease your palms with oil and shape them in burger patty. • Set a grill pan or a normal pan on medium heat, add oil and grill the chicken burger patties from both the sides until crisp and golden brown. Make sure the chicken is completely cooked. Grill the burger patties and keep aside. • Place a slice of cheese and cover and grill, allow the cheese to melt. • Slice the burger buns in two halves and grill them in the same pan for 2 minutes on both sides. Full written recipe for Butter chicken burger Prep time: 20-25 minutes Cooking time: 45-50 minutes Serves: 6-7 burgers Makhani sauce Ingredients: Oil 1 tbsp Whole spices: Jeera (cumin seeds) 1 tsp Tej patta (bay leaf) 2 nos. Hari elaichi (green cardamom) 3-4 pods Onions 2 medium size (sliced) Tomatoes 7-8 medium size (roughly diced) Garlic 10-12 cloves Ginger 1 inch Green chillies 2-3 nos. Coriander stems 2 tbsp Cashew nuts 10-12 nos. Powdered spices: Dhaniya powder 1 tsp Haldi powder 1 tsp Kasuri methi 1 tsp Sabut kashmiri lal mirch 5-6 nos. Salt to taste Water as required For tadka Butter 1 tbsp + oil 1 tbsp Garlic 1 tbsp (chopped) Green chillies 2-3 nos. (chopped) Ginger 1 inch (julienned) Kashmiri red chilli powder 1 tbsp Hot water as required Honey 1 tbsp Fresh cream 1/4th cup Garam masala 1 tsp Kasuri methi 1 tsp Fresh coriander leaves 1 tbsp (chopped) Methods: Set a wok on medium high heat, add oil, whole spices & sliced onions, cook until the onions are translucent. Further add tomatoes and the remaining ingredients of the makhani gravy base, mix well and cook on medium high flame. Add water as required & mix well, cover and cook on medium flame for 20-25 minutes or until the tomatoes are mushy. Switch off the flame and cool down the mixture to room temperature for grinding. Make sure to discard the bay leaf before grinding. Transfer the mixture in a grinding jar and grind to a fine puree, strain and keep aside, if you're not obsessed with the silky-smooth texture of the gravy, you can choose to skip the step of straining, but make sure you grind the mixture really smooth and fine. For tadka, set a wok on medium heat, add butter + oil, garlic, ginger & green chillies, stir & cook for a minute on medium flame. Low down the heat and add kashmiri red chilli powder stir & cook for a minute, and further add the pureed gravy, stir & cook for 2-3 minutes on medium flame. Add honey, garam masala, fresh cream, butter & freshly chopped coriander leaves, stir & cook the gravy for 1-2 minutes. Taste the gravy and adjust the salt accordingly. Switch oof the flame & place the live charcoal in a bowl, pour ghee and smoke the gravy for 2-3 minutes to impart the smoky flavour. Your makhani sauce is ready! Keep aside to be used in burger. Though the makhani sauce is little extra, you can keep the makhani sauce in the fridge and use later. Crispy chicken fillet Ingredients: Spice mix: Kashmiri red chilli powder 2 tbsp Kala namak (black salt) 1 tsp Jeera (cumin) powder 1 tsp Dhaniya (coriander) powder 1 tbsp Amchur (dry mango) powder 1 tsp Kasuri methi 1 tsp Haldi (turmeric) powder 1/4th tsp For chicken marination: Boneless chicken (thigh/breast) 500 gm Salt to taste Garlic paste 1 tbsp Vinegar 1 tbsp Mustard oil 1 tbsp Fresh coriander 1 tbsp (chopped) Prepared spice mix 1 tbsp Spice flavoured flour: Maida (refined flour) - 2 cup Prepared spice mix - 2-3 tbsp Salt to taste Black pepper powder - 1/2 tsp Ice cold water (for dipping while coating the chicken) Oil for deep frying Method: For spice mix, add all the ingredients in a jar or bowl and mix well, keep the spice mix aside to be used later. For crispy chicken fillet, take boneless chicken, am using chicken thigh you can use any boneless chicken of your choice. Make incisions over the chicken on both the sides & pound the chicken or hammer the chicken with the spine of the knife to break down the muscle fibre, make sure the chicken is intact as a whole piece, pound all the chicken pieces in same way. Once pounded, marinate the chicken with, salt, garlic paste, vinegar, mustard oil, fresh coriander and prepared spice mix well, marinate the chicken for minimum time of 15-20 minutes. For spice flavoured flour, mix flour with prepared spice mix, salt & black pepper powder, mix well and keep aside to coat the chicken. Now, as the flour and chicken are ready, coat the chicken well with spice flour while rubbing it, further shake well & dust off the excess flour to form flakes & further dip in ice-cold water, further coat it again with spice flour really well, while rubbing so the flakes are developed over the chicken slice, shake well to dust of the excess flour and the flakes will form. Keep aside to be fried. Set wok filled with oil for deep frying, deep fry the coated chicken in hot oil on medium heat, until crisp & golden brown in colour. Crispy chicken fillet is ready. Time to whip up some deliciously crispy and juicy burgers for the family - we got this! In today’s recipe, I’m going to take you through how to make incredible buttermilk fried chicken burgers with a spicy sauce (mummy and daddy size) AND some sliders with a burger sauce for the kids… or mates that prefer a slider during game time. Now, if you don’t have time or patience to make the burger buns, I won’t be offended. Let’s cook! Ingredients Dough - 100ml milk - 100ml water - 9g yeast - 360g bread flour - 1 tsp sea salt - 1 tbsp sugar - 2 whole eggs (one for egg wash) - 1 egg yolk - 3 tbsp vegetable oil Chicken marinade - 6 chicken thighs - 400ml buttermilk - 1 tbsp salt + for the dredge - 1/2 tbsp smoked paprika + + for the dredge - 1/2 tbsp garlic powder - 1/2 tbsp white pepper - 1/2 tbsp msg Chicken dredge - 260g flour - 1/2 tbsp salt - 1/2 tbsp paprika - 1/2 tbsp garlic powder - 1/2 tbsp white pepper - 1/4 tbsp msg Burger extras - Iceberg lettuce - Pickles Chipotle mayo - Chipotle peppers in adobo sauce (use one or more chillies) - 100ml mayonnaise Burger sauce - 100ml mayonnaise - 50ml Ketchup - 30ml American mustard - 20ml Pickle juice Method Dough 1. Warm your milk and water until it’s lukewarm and then mix in your yeast and set aside. 2. In a stand mixer with the hook attachment, add all other ingredients and turn mixer on to medium and pour in your warm milk mixture. 3. Mix until the dough is smooth and coming away from the bowl, this should take 9-10 minutes. 4. In a bowl greased with olive oil, place the dough and cover it with a tea towel, and set aside to proof until it doubles in size. This will take 1-2 hours depending on how warm your room is. 5. Once it’s doubled in size, remove the dough from the bowl and knead it for 20-30 seconds. 6. Divide it into 120g for burgers or 80g for sliders. I managed to get 4 burgers and 3 sliders from my dough. 7. On a baking sheet, spray with oil, line with paper and spray with more oil, place your rolled buns making sure you spread them out evenly. Cover this with another tray. Leave them until they double in size, this should take 1-2 hours. 8. Whisk together 1 egg and a dash of milk. With a pastry brush lightly brush the buns and place in a 190°C oven for 15 minutes. Chicken marinade 1. Mix the salt, paprika, garlic powder, white pepper and msg together for your seasoning. 2. Take your chicken thighs and butterfly the thick end. Season both sides. 3. Place your chicken in a bowl and cover them with buttermilk. Leave to marinate for a minimum of two hours, overnight is better. Chipotle mayo 1. Dice up as many chillies from the tin as you would like (I used one) and mix it with the mayo. Burger sauce 1. Add all of the ingredients together and mix. Fried Chicken 1. For the dredge, mix the flour, salt, paprika, garlic powder, white pepper and msg together. 2. Spoon in 4 tbsp of buttermilk from the chicken marinade and mix. 3. Coat your marinaded chicken in the flour mix. 4. Fry your chicken in oil at 180°C for 10-14 minutes until golden brown and cooked through. Drain it over a wire rack or paper towel. Assemble your burger 1. Slice you bun in half and butter on both sides. Toast it in a pan over a medium heat. 2. Add your desired sauce to each bun, then add your lettuce, chicken and pickles. 3. All that’s left is for you to eat your homemade fried chicken burger!

Ingredients: Chicken prep 2 chicken breast 3 tbsp bell pepper (chopped) 2 garlic cloves (finely chopped) ¾ tsp salt ¾ tsp pepper 2 tbsp onion (thinly sliced) 2 tbsp cheddar cheese ½ plain yoghurt 2 tbsp mayonnaise 2 tbsp ketchup ½ tsp garlic paste ½ tsp cumin (roasted) ½ tsp chilli powder (roasted) ¼ tsp salt Instructions: Chicken Patty 1. Batter the chicken breast and cut it up into small minced pieces. 2. Add bell pepper, garlic cloves, salt and pepper to the chicken - use knife to chop everything to small fine pieces. 3. Add onions on top of the patty and cook for 5 minutes on low heat. 6. Flip the chicken patty and sprinkle cheddar cheese all over. 7. Cook for 3 minutes on low heat. 8. After 3 minutes, the chicken patty is now ready. Special Sauce 9. In a separate bowl add plain yoghurt, mayonnaise, ketchup, garlic paste, cumin, chilli powder and salt. 10. Mix all the ingredients together thoroughly. 11. Your sauce is now ready to be spread onto burger buns! 12. After spreading the sauce onto the bun, place the chicken patty on top. 13. Add any toppings of your choice e.g. pickles, lettuce, tomatoes. 14. Close your burger and enjoy!
