In a time when much of the world is facing lockdown because of the coronavirus pandemic, unable to see family and friends in person, many of us are turning to food for comfort. Different dishes are considered comfort food around the world, but they’re all typically high in sugar, fat, and salt. These flavors are key in not only making us feel happy but also in solidifying these dishes in our memories. Twenty people from different cultural backgrounds shared what their favorite comfort food is and what it means to them, and we looked at how their dish of choice is made. It’s a small and manageable market to get a feeling for the ingredients that go into Senegalese food. At lunchtime just outside the market you’ll find a series of street food stalls that set up serving home cooked Senegalese food. You’ll find dishes like Thieboudienne (jollof rice), okra stew, sweet potato leave, mutton curry, and much more. The food is sensational, so much delicious flavors and huge plates of food. I love the “guana” local chili peppers that taste similar to scotch bonnet chilies. African Renaissance Monument - We then toured the African Renaissance Monument, one of the icons of Senegal and Africa, to symbolize the rebuilding of Africa after colonization, and to never forget the past slavery trade. Pulled Pork and Veggie Rice Bowl RECIPE COURTESY OF JEFF MAURO Level: Easy Total: 16 hr 30 min (includes marinating time) Active: 30 min Yield: 4 servings Ingredients Pulled Pork: One 3- to 4-pound boneless pork shoulder or Boston butt, with fat cap 3 tablespoons favorite barbecue rub, such as Mauro Provisions BBQ Chip Dust or Black Powder Rub, plus additional for broiling and serving 1 cup barbecue sauce Rice: 2 cups long-grain white rice 1/2 teaspoon kosher salt Bowl: Nonstick cooking spray, for the bowl 2 avocados, thinly sliced and fanned out 1 cup finely diced carrots 1 cup finely diced pineapples Directions Special equipment: a 6-quart slow cooker For the pulled pork: Using a sharp knife, score the fat cap into a crosshatch pattern. Rub the entire shoulder with the barbecue rub. Wrap it in plastic wrap and let it marinate in the refrigerator overnight (this step can be skipped, but it really makes the pork super tasty, so try to plan ahead!). In a medium bowl, whisk together the barbecue sauce and 1 cup water. Place the pork in a 6-quart slow cooker and pour the sauce around it. Set the slow cooker to low for 8 hours and cover. Let it roll! For the rice: Rinse the rice under cold water until the water runs clear, then drain. Combine the rice, salt and 3 cups water in a medium saucepan and bring to a simmer. Stir once to ensure nothing is sticking to the bottom. Cover and simmer on very low for about 20 minutes. Remove from the heat with the COVER STILL ON. Let sit for 20 minutes. Fluff before serving. Once the pork is extremely fork tender, position an oven rack in the lower third of the oven and preheat the broiler on low. Transfer the pork, fat-side up, to a baking sheet. Reserve the cooking liquid. Dust the pork with a little more rub and broil until the fat is crispy, about 4 minutes. Transfer the pork to a cutting board. Remove the crispy fat and set aside. Shred the meat with 2 forks and transfer to a serving bowl. Drizzle it with some of the cooking liquid. Keep warm until ready to assemble the bowls. For the bowl: Spray a small bowl with nonstick spray. Pack some rice in the bowl, then turn the molded rice out into a larger bowl to make a beautiful dome of rice. Add a nice portion of pork and some pork fat on the side of the rice. Fan the avocado in the bowl, then arrange the carrots and pineapple separately on the rice. Sprinkle the meat with extra barbecue rub and a drizzle of the reserved cooking liquid. Repeat making 3 more bowls. But I had one last adventure to go on in southern Iran before hopping on a flight back home to Miami! Join me on my epic 10-hour Persian food experience in southern Iran! As always, I was joined by my friends Mr. Taster and the team from Kootook Travel. We’d be hitting up four different villages and end our time in Bastak. 📝SUBSCRIBE TO MY NEWSLETTER: 🤍 🌎 MY TRAVEL BLOG: 🤍 Our first adventure was breakfast at a private residence, where we’d have a number of dishes including eggs, bread, jams, sauce, and even a watermelon with Mr. Taster’s face carved into its rind! We started with fried eggs, a type of broken-up crispy bread, a Persian omelette with tomatoes, fluffy round bread, and more. The fluffy bread was great with the salty fish sauce, and the bread reminded me of an English muffin! Next was balaleet, which is sweet noodles with egg. It was fantastic, especially with the salty fish sauce. You can only get this fish sauce in southern Iran. Mixing the crispy bread and the fried egg was also excellent. Then, I tried some karak tea and coffee, followed by a chili. I tried some bread with fish sauce, vinegar, and oil. Then, after our traditional breakfast, we drove 15 minutes to a cave that has electricity and a water reservoir. There, we’d make some bread inside the cave! Inside, a local woman rolled out down, cooked it on the flat top, and added fish sauce and oil. Then, she rolled it up. It was very tasty and crispy! Next, she roasted fennel seeds, wheat flour, and coriander seeds to make a powder. They preserve sardines in salt for 3 months, strain them with water, and then add the powder to the water! We rode a swing outside before watching the women grind some spices with an old wheel outside. Along the way to our next spot, we saw some cone-shaped structures out in the arid landscape. We arrived at a caravanserai, which are 17th-century hotels and rest stops that were often built along trade routes. Merchants would stay at them, get a bite to eat, and even do business during their travels. There would be one every 36 kilometers! This one has 12 rooms. We headed into one of the rooms to have a traditional Bastaki biryani. It was a mountain of rice and meat! I loved the potato, which had soaked up the juices. It was so fantastic. The beef melted in my mouth, and the chickpeas gave it a nice texture. It was different from all the other biryanis I’d had around the world! Adding some mast-o musir, or shallot yogurt, gave it a creaminess and a bit more acidity! For our last adventure of the day, we drove to a halva factory in Bastak! We watched them soak the sesame seeds and extract the liquid, and strain it. I tried some of the sesame. I liked it a lot! Then, they put it in the oven and bake it. Next, they put it through a presser to make tahini. I couldn’t wait to try it! It looked so high quality and delicious. Next, they mix the tahini with date syrup to make halva ardeh. Saint Louis happens to be the homeland, where you will find the original Jollof Rice, known locally as Thieboudienne. Today we have the privilege to see the full process of making jollof rice, one of West Africa’s best foods! I have great memories of when I was growing up and I had many friends from West Africa. Occasionally they would come to school with homemade jollof rice - and I remember my first taste which was love at first bite. Something about the spices, tomato rice, and tender meat or fish, garlic and chilies, all combined to make one of the most comforting foods known. You will find versions of jollof rice throughout West Africa and all of Africa, but Senegal, and specifically Saint Louis is the birthplace of jollof rice and where you’ll find the original version. Throughout West Africa you’ll find jollof rice cooked with a variety of meats, but in Senegal it’s most common with fish. We were invited to a local family home and they cooked the entire process of jollof rice (thieboudienne) from start to finish. It’s an incredibly complicated dish with dozens of ingredients, herbs, and seasoning. I loved all the different vegetables like the bitter eggplants and the hibiscus leaves and tamarind. Once all the vegetables and fish are cooked in the tomato paste, they are taken out and the rice is cooked within the liquid. Additionally she made an amazing sauce of onions and carrots and tomato sauce and chilies. Once all the ingredients were ready, the jollof rice are assembled on communal eating platters with rice on the bottom, all the vegetables and fish on top, and extra onion sauce sprinkled on top. I can say it was the best jollof rice (thieboudienne) I’ve had in my life! Later we went on a horse cart tour of Saint Louis and visited the amazing fishing village along the Atlantic coast. People were cool and the atmosphere was lively and vibrant. Another incredible day in Senegal, West Africa! Add fresh noodles, season with salt and add salty wild chives add curds. 🇲🇳 CAMEL MILK TEA: Boil water and add tea leaves, fresh camel milk and mix. Boil and filter it. 🇲🇳 MILK VODKA: Add airag camel milk and curd to the bottom layer of the pot and boil. Put on the body pot. Hang the collector - small pot. Use fabric to cover the top pot. Add the top pot and pour water. Let it boil for 2 hours. The steam/dripping in the collector is milk vodka. 🇲🇳JEMBII BBQ: Add organ fat to the heated pot. Add camel ribs, lake salt and mix. Add in more meat and then close the lid, allowing it to fry. Repeat this step until it is cooked. Prepare the chives dough: using flour and wild chives. Add potatoes, onions and water. Season with salt. Let it cook until it is tender/soft. Continue to cook until the chives dough is cooked. 🇲🇳HUMP OIL: Boil water and cut the humps into smaller pieces. Add the humps. Let it boil. Remove the hump and wait until the fat water is frozen. Use as oil. 🇲🇳DUMPLING: Prepare dough. Chop meat and onions. Stuff mixture within the dough and steam for an hour. 🇲🇳 GRILLED HEART: Slice heart into small and thin pieces. Skewer sliced heart and onions. Score the meat and add to grill.
