Pomelo is like a giant, sweet grapefruit. When you get a good pomelo..few things are more refreshing and invigorating to eat! It's also the perfect candidate for this beautiful, light salad, and I waited a long time to make this recipe cuz I wanted to make sure I am in Thailand where pomelos are the best in the world! In this video I also show you how to peel a pomelo! It's a massive fruit so it is intimidating to many people, and tons of Thai people (including me) often buy pre-peeled ones just for convenience. But once you know the trick, it's really not hard, just takes a bit of time! And FYI, peeled pomelo segments will keep in the fridge for at least a week or 2, so after I peel the whole thing, I just stick them in a well sealed container in the fridge, et voila, ready-to-eat delicious pomelo in the fridge for days! Making Pomelo Marmalade from start to finish. Since I am from South East Asia, this is something I had been curious about for while now. After making this I can say, curiosity satisfied. This marmalade is full of floral notes brighten up with its tart under tone and balanced sweetness. Enjoy it with some toast, white bread, bloomer slices, scones and even pancakes or waffles. #pomelo #marmalade #honeypomelo Recipe Breakdown 300g Pomelo Peel 150g Sugar (50% of Peel Weight) Blanch in rolling hot water for 2 minutes x 3 times with new hot water. Only start the timer once the water comes to a rolling boil. Blend the juice and strain the pulp. How to eat pomelo skin! This is a really classic Cantonese dish, and an awesome use of the pith of the pomelo. It was super awesome to have Dawei show us how to make this - I particularly loved his version of this one. You see this one at some old school/high end Cantonese restaurants, and while those can be tasty, you never really know that you're eating a citrus skin. Because they'll generally peel the skin off, you end up losing pretty much all of it's citrus-y flavor. The way Dawei does this retains that flavor, and definitely makes for my favorite braised pomelo skin I've ever had. For how to potentially veganize this dish, check the pinned note in the comment. While the flavor profile he did (shrimp eggs) is obviously not vegan (though is roe vegetarian?), the supreme soy sauce flavor is, so check below for an idea how to do that. INGREDIENTS - One large pomelo (柚子) - For the soup: 250g fish bones and heads, we used mud carp (鲮鱼) -or- shrimp shells; 1L water - Garlic, ~1 clove - Liaojiu, a.k.a. Shaoxing wine (料酒/绍酒), ~1tbsp - Seasoning for the braise: 1/2 tsp salt, 1/2 tsp sugar, 1/4 tsp white pepper powder (白胡椒粉), 1/2 tbsp dried shrimp roe (虾籽) -or- 1 tsp dried shrimp powder - Slurry for the braise: 1 tsp cornstarch (生粉), 1 tsp dark soy sauce (老抽), 2 tbsp water - Lard (猪油), 3 tbsp. [1 tbsp for the soup, 1 tbsp to start the braise, 1 tbsp to finish the braise] - Scallions, for finishing. Apparently Dried Shrimp Roe IS available on Amazon. Last time we used the ingredient (Wonton Noodles), it wasn't. Still, hardly seems to be a mainstay at most Chinese supermarkets in the West: 🤍 HOW TO MAKE DRIED SHRIMP POWDER Basically... just blitz some dried shrimp. If you're using a blender, ~20 will likely be the minimum dried shrimp you used for a batch. In a spice grinder or food processor, you could likely get away with less - we'd go ~10 dried shrimp in that case. Especially with a blender, your dried shrimp will be a bit stringy. For the purpose of this dish, we'd then take that and finely mince it. You'll want the powder to be able to more or less disappear into the braise. PROCESS 1. Peel the pomelo (2:04 in the video). 2. Grill the skin, then dunk in water & scrape off the charred bits (2:25 in the video). Make sure you get the skin completely black - be patient, this'll take a few minutes. After you dunk and scrape off the charred bits off one piece, change the water... it'll be quite black with gunk. 3. Soak and squeeze, 8-9 times or until the water is clear & no longer slimy (3:02 in the video) Add the skins to a bowl of water. Give them a quick scrub with your hands (~10 seconds) - the pith will absorb water quite fast. Squeeze the water out, transfer to a plate. Swap to a new bowl of water and continue the process. 4. Cut off the hard end of the pomelo skin, then cut into three pieces. Soak and squeeze once more. (3:28 in the video) 5. Blanch the skins for ~5 minutes, covered. Then transfer to cool water, swap the water, and squeeze once last time (3:43 in the video) 6. Make the fish soup (4:03 in the video). Fry the fish bones in lard until slightly browned, ~90 seconds, then add 1L of cool water. Cook for ~5 minutes, then strain. If using shrimp shells instead, I would personally let them go for a bit longer (I like 30-45 minutes, but you could cut that short in a rush) 7. Braise the pomelo skins (4:39 in the video). Fry the garlic in 1 tbsp of lard, then hit it with the wine. Quick mix, soup back in, season with salt & sugar, add the pomelo skins. Boil covered for ~5 minutes or until a chopstick can poke through. Season with the white pepper and shrimp roe, add the tbsp of lard, thicken with the slurry. Continue to cook for ~30 seconds, sprinkle over some sliced scallions. THAI POMELO SALAD Ingredients 250 grams pomelo, peeled, and cut into wedges ½ cup shredded cabbage ½ cup shredded purple cabbage ½ cup mixed coloured capsicums strips ¼ cup chopped spring onion greens 1 cup bean sprouts 2 tbsps chopped fresh mint leaves 2 tbsps shredded basil leaves + for garnish ¼ cup coarsely crushed roasted salted peanuts + for garnish Toasted black sesame seeds Dressing 1 tbsp finely chopped garlic 1½ tbsps brown sugar ½ tbsp finely chopped ginger ½ tsp palm sugar 1 tsp red chilli sauce 1 tsp soy sauce 1 tbsp blended sesame oil Salt to taste 2 tbsps creamy peanut butter 1 tbsp lemon juice Method 1. To make the dressing, combine together garlic, brown sugar, ginger, palm sugar, red chilli sauce, soy sauce, blended sesame oil, salt, and peanut butter in a bowl. Add lemon juice and mix. 2. It’s a sweet citrus fruit with notes of bitterness and sourness. There are multiple benefits that we derive from this fruit like Vitamin A & C, fiber, potassium, magnesium, amongst many others! Pomelo is a separate species from grapefruit. The modern grapefruit we now know, was created as a hybrid between a Pomelo & an orange! You can eat Pomelo as it is or make a salad, juice it, make jam/marmalade! I decided to make a sorbet by freezing 3 cups of pomelo overnight and blending it with 1.5 cups of coconut milk, 3 Tablespoons of honey/sweetener of choice & 1 Tablespoon of lemon/lime juice. I blended it using a powerful mixer and froze it again for a few hours before scooping☺️ (Pro Tip: freeze the mixer for 10-20 minutes before blending & add the coconut milk at the bottom before putting the fruit on top- keep scraping the bowl as needed)

Super easy sugar-free vegan and gluten-free mango dessert! You can whip this up within 15 mins! It is really up to you how much you want to make since it is a preference for more mango, more sago, or more coconut milk. I've added a little bit of oats milk to make it more liquid so it's drinkable using a straw. Taste and adjust accordingly to personal preference i.e. extra chillis, etc. Bring a pot of water to a boil, and generally season with salt. Add Shrimp and cook for 1 minute, or until slightly springy to the touch, but translucent in the middle. Drain and allow to cool. Remove the woody base and tough exterior leaves of the Lemongrass, and chop off the bottom 2 inches of the stalk. Finely slice the bottom 2 inches of the Lemongrass. Finely slice the Kaffir Lime Leaves. In a bowl add Pomelo, Lemongrass, Kaffir Lime Leaves, Mint, Shrimp, half the Roasted Peanuts, half the Toasted Coconut, and all the dressing. Toss to coat. Garnish with remaining Roasted Peanuts, Toasted Coconut, and a few extra Mint Leaves. Juicy pomelos, creamy avocados and crunchy salad leaves tossed in a tangy-sweet olive olive dressing. POMELO SALAD Ingredients ¼ medium pomelo ½ medium avocado 8-10 arugula leaves 5-6 iceberg lettuce leaves 4-5 lollo rosso lettuce leaves 1 tablespoon lemon juice 1 tablespoon maple syrup 1 tablespoon olive oil Salt to taste Crushed black peppercorns to taste ¼ cup pecan nuts, toasted Method 1. Peel and cut the pomelo into segments. Cut each segment into half. 2. Halve and deseed the avocado. Scoop out the flesh and slice. 3. Put arugula leaves in a bowl. Add iceberg lettuce leaves, lollo rosso leaves, pomelo halves, sliced avocado, lemon juice, maple syrup, olive oil, salt and crushed peppercorns. 4. This super yummy Mango Sago Pomelo dessert was invented by former head chef (Mr Wong Wing Chi) of Lei Garden in 1984. He created this recipe to suit the taste of Singaporeans as they were opening their first branch in Singapore. Since then, many different people have started to make their own version of Mango Pomelo Sago and we're happy to present ours. Other than the ingredients we used in this recipe, Mr Wong added coconut milk and milk but we omitted them because we didn't think it will really make a lot of difference but feel free to add some coconut milk to add fragrance to this dessert. If you like your dessert to be less creamier than ours, simply add more water and reduce the amount of evaporated milk. As evaporated milk is slightly sweet, you may need to increase the amount of sugar used since you'll be adding more water. See the ingredient list below for your easy reference. A citrus jam that smoothly blends with bread, Perfect for breakfast on the go or snack🍯 1 big pomelo 2 cups white sugar 1/2 cup water Directions: Peel the pomelo. Deseed. Remove the pomelo latex. Blend half of the pomelo flesh. Add 1/2 cup water. Shred the other half and set aside. Bring to boil the blended pomelo flesh at medium heat. Add sugar and the shredded pomelo. This dessert is featuring with mango, pomelo and sago. Invented in 1984 by Lei Garden, it has sustained its popularity up till now. This dessert can be found in the menu of many Chinese restaurants and dessert stores in Hong Kong. In this video, we would like to share with you how to make the popular Chinese Dessert Mango Pomelo Sago at home. With simple steps, you can enjoy this yummy Chinese dessert dim sum. The recipe is simple and you can do it at home easily. Ingredients of Mango Pomelo Sago: 3 pieces Mango (Suggest to use Philippine Mango) 1/2 Pomelo (Suggest to use Thailand Pomelo) 100g Sago 200ml Coconut Milk 300ml Milk 150ml Drinking Water 60g Sugar Methods for making Mango Pomelo Sago: 1. Cook sago in boiling water until it turns to be transparent and soak in cold water for a few minutes. Then store it in refrigerator. 2. Add sugar, milk and coconut milk into water and boil it until sugar is dissolved. Place in refrigerator when cool. 3. Slice off the top of the pomelo. Make vertical slits along the sides of the pomelo. Using your hand, peel off the skin working from the top to bottom. Peel away the white membrane from 3 wedges of pomelo and remove the pomelo sacs. Loosen the pomelo sacs and set aside. 4. Reserve half of the cubed mango and set aside for use as toppings for the dessert. Blend the rest of the mango into smoothie. 5. Mix mango smoothie, pomelo sacs and sago into coconut milk. 6. Chill in refrigerator 1-2 hours for better taste and serve. Add mango cubes on top for garnishing.
